Description

Southern-style green beans made with smoked turkey necks, and potatoes. A delicious all-in-one dish.


Ingredients

  • 2 Lbs Green Beans
  • 1 Lb Smoked Turkey Necks
  • 2 Strips of Pork Bacon, sliced
  • 1 Lb Small Red Potatoes, chopped
  • 1 Cup Onion, coarsely chopped
  • 1/2 Cup Crushed Tomatoes
  • 2 Tsps Minced Garlic
  • 1 Qt Water
  • 1 Qt Chicken Broth
  • 2 Tbs Butter
  • 1 Tbs Vegetable Oil
  • 1/4 Cup Apple Cider Vinegar
  • 2 Chicken Flavor Bouillon Cubes
  • 1/4 Cup Sugar
  • 1 Tbs Seasoning Salt
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1/2 Tsp Black Pepper
  • 1/8 Cayenne Pepper (optional)

Instructions

  1. Chop the onions into small pieces.

  2. Place a large pot over medium-high heat.

  3. Add the oil, bacon, minced garlic, and onions, and fry for 5 minutes, then remove and set aside. 
    *Stir periodically*

  4. Once the bacon chills, cut into medium-sized pieces.

  5. Place the same pot over medium heat this time and deglaze the pot with water.

  6. Add the turkey necks, cover with a lid, leaving a crack on one side, and boil for 1 hour.

  7. Chop the potatoes in half, then sit them in a large bowl and cover with cool water.

  8. After an hour, rinse the potatoes, then add them to the pot of turkey necks.

  9. Add the green beans, the onions, bacon, minced garlic, butter, and broth.

  10. Add in all the seasonings, bouillon cubes, crushed tomatoes, and vinegar, then stir well.

  11. Cook the green beans for 1 hour and 30 minutes to 2 hrs. 
     They taste better when most of the liquid has cooked down.
