The BEST Spam Egg And Cheese Sandwich Ever

This is a spam egg and cheese sandwich to die for. Fried pork spam, topped with fried eggs and cheese over toasted bread.

You may think I’m being dramatic, but this sandwich is goodT!!! The only breakfast sandwich that will have me speaking another language my toes curled, with my eyes closed in awe, basking in a good “high” as I take each bite.

Let me start off by saying I’m surprised I don’t make this more often. As much as I love spam egg and cheese, I only make it when I have a taste for it, which is, oddly, once or twice per year. 

You’d think I’d make it more often, given my love for it and how freaking delicious it is, but I don’t. It’s something I tend to make once in a blue moon. But folks, if you have to try it, if you haven’t tried it before, you will definitely thank me later.

What to love about this spam egg and cheese sandwich:

  • Easy to make: Ok, so this spam eggs and cheese recipe is very easy to make. All you do is toast ya bread, fry ya spam and eggs, add cheese to it, and then place them over the bread. That’s it!
  • Quick: It doesn’t take long because everything takes a few minutes to make. This recipe shouldn’t take you more than 20 minutes to make, including the prepping process.
  • A Finger food: This is the perfect breakfast to make for your kid(s). You can fold it up in aluminum foil and give it to them to eat on their way to school. No fork or spoon is necessary; it’s a sandwich. Have napkins on hand, though! Lol!

Childhood memories of spam egg and cheese sandwiches

Now I was born in South Philly, spent most of my adulthood in West Philly, but lived in North Philly for 2 years as a child from 94′ to 96′! I went to an elementary school called Robert Morris, which is a few blocks from where I lived.

What I remember most is how much I hated school. I was always sheltered and short, with a timid personality. I didn’t experience any bullying but was always scared of the rougher kids in school from the hood. Lol!

But during those stressful early school years, I could remember my mom giving me long hugs because she knew how much I hated school and being apart from her. My lil sister who enjoyed school would go straight to class.

My mom and I would sit together as long as possible before school started, and she would always pick up a breakfast sandwich from this nearby food stand. As yall know, Philly is very walkable and convenient, with a store on every corner. 

She’d always buy a spam egg and cheese sandwich with toasted bread. And let me just say… even at 8 yrs old, I knew good food from basic food because I came from a family of great cooks. It was easily the best sandwich I ever had.

The spam was new to me; I don’t remember my mom or anyone in my family making spam for me. I fell in love with it every since I took that first bite of that sandwich. The toasted bread, with the cheesy eggs, and spam was a killa combo.

Introducing my brother to spam egg and cheese sandwiches

I shared an apartment with my younger homie Smitty who im older than by 3-4 years. I’m obviously a better cook because he didn’t know how to cook at all! Lol! But he my boy so whats mine is his you dig? So let me just say…

When I shared this sandwich with this man, he fell in love with it instantly! Haha! Smitty use to love him some beer back in the day. I remember him looking at me like I had given him the best beer ever when he tried it.

He looooooves the Spam. When he talked about how much he loved it, I realized how unpopular it is among young folks today, especially since we’re in a health-conscious society where people are eating healthier.

Alot of folks left pork alone or just dont eat it for religious reasons… but when I think of Spam I think of a food older folks like. It’s not every day people under 32-34 talk about eating Spam. Most probably dont know what it is. Lol!

Cookware and utensils you’ll need:

Aiight, so here are the ingredients I use, and the cooking utensils you’re going to need to make this simple masterpiece. Im telling you yall going to love this sandwich so let me get into what you’ll need.

Ingredients you’ll need:

  • Bread
  • Spam
  • Eggs
  • Cheese
  • Salt
  • Pepper
  • Vegetable Oil

Frying the Spam

Now, when it comes to spam, it typically comes in a rectangular-shaped can. You can find it at any local supermarket. Here in Philly, they’re even in corner stores; we call them poppy stores. Lol!

  • How to slice the spam: For one spam egg and cheese sandwich, I use 4 slices of spam. I slice four 1/4 inch thick even-shaped pieces widthwise. You can get 8 pieces of spam from the can in total.
  • Make them crispy: You want the spam to be pretty crispy! So, I fry them over medium-high heat for a short period of time. I fry the spam in hot oil on each side for a few minutes until crispy, like about 3 minutes or so per side.
  • Absorb the oil: After I fry the spam, I sit them on a paper towel to absorb the oil.

The seasonings

Spam by the way is pretty salty but I still add salt to the eggs so they aren’t bland. If you’re salt sensitive omit the salt from the recipe. The sodium from the spam might just be enough salt for someone who is salt sensitive.

  • Salt: The salt adds taste to the eggs, but I only use a little because the spam itself is pretty salty.
  • Black Pepper: Pepper is a must. I only use a little, but it makes a major difference.
  • White pepper is a good alternative: You can season the eggs with white pepper if you don’t have black pepper or are one of those folks who hate to see black specs of pepper in your eggs. Lol

Making the cheese eggs

  • Use a fork to beat the eggs: Beating the eggs is effectively done using a fork. You can use a whisk, but the forks are smaller and allow you to really whip the eggs well.
  • Don’t overcook the eggs: After I season the eggs, I reduce the heat of the griddle or skillet from medium-high to medium. And because I add the eggs right after removing the spam, the griddle is still very hot so they only take 2 minutes. Dont overcook and burn the eggs!
  • Add the cheese once the eggs are done: Make sure you add the cheese once the eggs are nearly done. Dont add the cheese to the eggs while they’re still raw and runny because it will take them longer to cook. That is unless you like your eggs a little runny.
  • White American Cheese: American cheese is the best cheese for this sandwich. I use Kraft singles, and if you can’t find it in a grocery store, you can get slices of white American cheese from the deli section.

Preparing the bread

I toast my bread; I can’t make a spam eggs and cheese sandwich with soft bread behind it. I dont care what bread I use, it has to be toasted. I use regular white bread. Potato bread is cool or wheat bread.

I like it lightly toasted. I dont want it black as me but I dont want it soft and white as snow either. Hahaha! That even made me laugh so I know yall chuckled reading that. Lol!

How to layer a spam egg and cheese sandwich

1. Ok, so my layering process is to fry the eggs.

2. Split the eggs in half.

3. Add the cheese to both halves of eggs.

4. Then, sit two pieces of spam over both halves of the cheese eggs.

5. Then I fold the sides of the eggs a little and sit them over each other between two slices of toasted bread.

6. Then I slice the sandwich in half down the middle just like they use to at the stand across from my elementary school.

Slicing it in half is perfect if you want to share it with your partner, sibling, or friend and it’s easier to eat.

Adjustments and modifications

Okay, so for my visual learners, there’s an old 7 yr old YouTube video I did showing my subscribers how to make a spam egg and cheese sandwich. Now, you may notice a few differences while watching the video.

You may notice that in the video, I only used one egg instead of 2 as I do now, and I layered the sandwich differently, but everything else is pretty much the same, so don’t worry; the video can still be helpful.

Just wanted to put that out there in case you look at the video and think, “This is different from the instructions on the website.” I’ve updated my recipes as time has gone by to improve them. 

How to make a spam egg and cheese sandwich

1. Fry the spam until crispy, about 3 to 4 minutes per side. 

  • Frying them over medium-high heat gets them nice and crispy.

2. Fry the eggs for a few minutes, right until they’re done no longer. Then add the cheese.

  • Slice the egg in half and slice 2 pieces of cheese in half, adding two slices to each egg.

3. Add the spam to top the cheese eggs.

4. Toast the bread until it’s nice and lightly toasted, like a golden brown color.

  • To achieve this, set your toaster to 3! The three setting usually lightly toast the bread.

5. Place the spam and cheese eggs in between 2 pieces of sliced bread.

Tips for success:

  • Spam slices: Make sure the spam is 1/8th in width. You don’t want the spam to be too thin but not too thick either. You should be able to get 8 evenly shaped pieces of spam from out of one can.
  • Toast bread last: If there’s a tip I have for you and what I would advise, its to toast the bread last so its hot when you add the spam eggs sand cheese to it. And don’t lay spam on it before eggs are done because it will soften it.
  • Don’t over-season eggs: As I mentioned before, don’t over-season the eggs. The spam is not only packed with so much flavor, but it’s pretty salty as well, so you don’t need too much salt or seasonings.

Ingredients

4 Slices of Spam
2 Slices of White Bread
2 Large Eggs
2 Slices of White American Cheese
2 Tbs Oil
1/4 Tsp Salt
1/8 Tsp Black Pepper


Instructions

1. Place a skillet over medium high heat and add in oil.
2. Slice the spam into 4 evenly shaped pieces.
3. Fry spam on each side for 3 minutes then set aside.
4. Meanwhile beat the eggs up and season them.
5. Reduce the heat to medium.
6.
Add the eggs and fry for 2 minutes.
7.
Splice in half then add in the cheese and spam.
8.
Toast the bread then place over bread.
9. Slice spam and egg sandwich down middle.
