A delicious all-in-one baked sausage and potatoes recipe that’s simple, quick, and easy to make. It can be served for breakfast, lunch, or dinner!

Hey yall welcome to my blog. I have this sausage casserole recipe I’ve been sitting on for two years, and I know y’all would love it. I just had to put numbers to it to make it an official recipe, but here it is.

What makes this a good recipe?

  • Easy to make: This is a very easy recipe! All you do is roll up your Italian sausage, chop ya onions and peppers, add your potatoes and a little seasoning, and bake until perfect. A teenager can do this quite easily.
  • It’s quick: Another thing I love about this dish is that it doesn’t require a lot of labor, takes only a few minutes to prepare, and you let it do what it does in the oven. But the hardest part is peeling and slicing the potatoes.
  • Everyone will love it: I like this dish because people can be hard to please, but if you like pork, this dish will pretty much do it for everyone. Peppers and sausage who doesn’t love that? Plus seasoned tender potatoes? Fan favorite.
  • One dish recipe: I hate doing dishes so these one pot one dish/skillet recipes are my thang! Lol! All you need to make this is a baking dish, aka casserole dish. We refer to them differently depending on where you’re from.
  • Multi-purpose: It can be served as a breakfast, for lunch, and for dinner. That’s another thing I love about this recipe. You can eat this at all times of the day.

How did this recipe come about?

The idea for this recipe came to mind two years ago, the night after I moved into a new apartment. I had just moved and still needed to do some grocery shopping, so I didn’t have much food in my fridge.

I had given my auntie, who was in need of food, most of the food I had left in the refrigerator at my old apartment. And I didn’t get much sleep the night before after all the moving and unpacking we did.

So I end up sleeping away most of the afternoon and evening! Lol! When I woke up, it was like 1 or 2 A.M, and I didn’t have any cooked food in the fridge.

It was super early in the morning, so Ubereats and DoorDash weren’t even an option because all the stores in my area were closed. I was so mad at myself for not ordering something before falling asleep.

I didn’t expect to sleep that long, but I guess I was tired, so… what did I do? What all humans do when we’re desperate… tapped into my creative mind. LMBO!

I noticed I had some peppers, onions, and potatoes in the fridge that I hadn’t used and was two days away from going bad, as well as a sweet Italian sausage along with a few other things in the freezer.

I thought to myself, “Hmmm, potatoes and sausage taste great together, plus I have some onions and peppers. I think I can make a nice little meal out of this if I make it right and add the right seasonings”.

Man, I grabbed those potatoes and peeled them quicker than you can say “eat.”  LMBO! I chopped up the sausage, onions, and peppers, pulled out a baking dish, and started seasoning everything.

I knew it was gonna be good because I could smell it before I even popped it in the oven. I was happy I thought of something good to make and relieved I had something to eat because there’s nothing worse than being HUNGRY!

I usually drink a glass of water and take my butt back to bed whenever I wake up hungry in the middle of the night. But because I wasn’t going back to sleep anytime soon, sleeping my hunger away wasn’t an option! 

Anyway, here are the cookware and utensils you’ll need and the ingredients for your recipe. Make sure you have all these things on hand if this is the first time making it to ensure everything comes out right.

Cookware and utensils you’ll need:

  • Casserole dish: Ok so we’ll be making this in a good ole casserole dish.
  • Potato Peeler: This is a good tool to have when you want to peel your potatoes without losing too much flesh, which can happen at times when peeling with a knife. So get you a potato peeler to peel your Russets.
  • Knife: You’ll need a knife to chop and cube the potatoes into evenly shaped squares. This is important so that they cook the same, and make sure you have it to chop up the onions and peppers.
  • Measuring Cups: Measuring cups are essential. You want to make sure you’re measuring everything accurately, especially if this is your first time cooking this or you’re new to cooking.
  • Measuring Spoons: Measuring spoons are for all the delicious seasonings and spices I’ll be using. You want to always have these on deck when you’re trying a new recipe.

Ingredients you’ll need:

  • Potatoes: Russet Potatoes
  • Meat: Sweet Italian sausage
  • Vegetables: Onions, Red and Green peppers.
  • Seasonings: Salt, Garlic powder, Onion Powder, Italian seasoning, Crushed pepper flakes, and black pepper.
  • Other: Olive oil and water.

The potatoes

Ok, so here are the potatoes I typically use for this recipe. By the way, sometimes I leave the skin on the potatoes, and sometimes, depending on my mood, I’d peel it off.

  • Russett potatoes: Russetts are ideal for baking because they are low in moisture and have high starch content, allowing them to bake up a fluffy center with crispy skin. Russets are my number 1 choice for this recipe.
  • Yukon Gold: These are all-purpose potatoes that can be used for anything. They’re versatile with thin skin and a creamy texture with a low to medium starch content, and they naturally have a buttery flavor.

Sweet Italian sausage + alternatives

Sweet Italian sausage is easily one of my favorite sausages, as I’m sure most of you know… I’ve used it in at least ten recipes I’ve posted on my blog by now. But that’s because of all the spices it has in it.

Below are some substitutions that might work just in case you would rather not use sweet Italian sausage; maybe it’s because it’s pork and you don’t eat pork, or you simply don’t like it.

  • Mild or Hot Italian sausage: If you want to go spicy, this is a great idea. Mild for a little spice, hot for more. If you do take this route, you won’t need the crushed red pepper flakes because these sausages will spice up the dish enough.
  • Breakfast sausage: If you don’t have sweet Italian sausage, you can use breakfast pork sausage, like Jimmy Dean sausage. I believe that would go well with this.
  • Ground Turkey: If you want to go the healthy route, try ground turkey, ground turkey will work with this recipe.

The seasonings

  • Salt: I use salt because this dish has an amazing flavor, and you don’t want any other flavors from complete seasonings to overpower it. So salt for taste is all that’s needed. It enhances the other flavors too.
  • Garlic and Onion powder: I always talk about this famous duo of seasonings. Whenever you see one in a recipe, you usually see the other. I use this for the potatoes mainly. No seasoning goes better with potatoes than garlic.
  • Garlic paste a good alternative: Both of these seasonings are needed for this dish. Now, if you don’t have garlic powder, which you should, as most of us do in our cabinets… Use minced garlic or garlic paste.
  • Crushed Red Pepper Flakes: The idea to add this was a last-minute thing. You all know I’m big on balance, so since this is a savory dish with a hint of sweetness, I decided to spice it up with a little hot pepper flakes.
  • Black pepper: Black pepper is a no-brainer. It’s one of those spices we overlook. It’s so underrated but makes everything taste better, and like garlic, it’s a must when it comes to potatoes, but only a very little is needed.

How to make Baked Sausage and Potatoes

1. Peel, then slice and dice your potatoes up into even size cubes.

2. Slice up your vegetables.

3. Preheat your oven.

4. Peel and then knead sausage into rectangular shapes.

5. Place everything in a casserole dish.

6. Sprinkle in the seasonings, then stir.

7. Add in the water and olive oil.

8. Bake covered with aluminum foil for an hour.

9. Bake uncovered for an additional 15-20 minutes or until sausage browns. 

Tips for success:

  • Don’t overhandle sausage: When you’re kneading and molding the sausage into meatballs, don’t overdo it, they don’t have to be perfect. Doing some will change the texture of the meat and result in tough sausage.
  • Use fresh onions, and peppers: Listen we all like to store our leftover veggies in the freezer for a later time and that’s cool but in some dish you want them to be sort of crunchy like fresh, to achieve that you use new vegetables.
  • Don’t bake too long: You want the sweet Italian sausage moist, not dry and chewy, so make sure not to overbake.

What to serve with sausage and potatoes

  • Eggs: Remember I mentioned how this dish works perfectly for breakfast? Well, think about it: you have a lot of the same ingredients you will put in an omelet, so eggs would go great on the side of this dish.
  • Bacon: You might think this is too much meat, but a couple of slices of crispy pork bacon will go nice on the sides. Pork bacon goes great with potatoes, so you can’t go wrong there.
  • Creamed Spinach: I’d love this with a side of creamed spinach if you’re thinking of a vegetable this will work well with. The cream will taste good with the peppers and sausage especially.
  • Hot sauce: As far as condiments go, hot sauce might not be too bad on this. I love hot sauce on my home-fried potatoes, which is very similar to this dish without the sausage. A little sprinkle of hot sauce won’t hurt.

Ingredients

2 Lbs Ground Sweet Italian Sausage
2 Lbs Russet Potatoes
1 Cup Onions, coarsley chopped
1 Cup Green Bell Peppers, coarsley chopped
1 Cup Red Bell Peppers, coarsley chopped
1/4 Cup Water
1 Tbs Olive Oil
2 Tsps Salt
1 Tsp Garlic Powder
1 Tsp Onion Powder
1/2 Tsp Italian Seasoning
1/2 Tsp Black Pepper
1/2 Tsp Red Pepper Flakes


Instructions

1. Chop the onions and peppers into thin long pieces. 
2. Shape the sausage meat into meatball or rectangle shapes.
3. Preheat the oven to 350 degrees.
4. Peel, slice, and dice the potatoes into medium size cubes.
5. Add the sausage, potatoes, and vegetables to a large baking dish.
6. Add in the seasonings and fold well.
7. Add in the oil and water, then tightly cover with aluminum foil.
8. Bake covered for 1 hour.
9. After 1 hour, remove the aluminum foil and continue baking for 20 minutes or until the sausage browns a little bit.

  6. good sausage casserole recipe! I needed to cut my potatoes into smaller chunks–saw your video after I made it! For my taste, I will next add more peppers. Easy and good results.






    1. Glad you liked it, Janet! Yea, I like a lot of peppers in mine as well but when I create recipes I use amounts that would appease the majority taste buds. I also like to add more salt and hot pepper flakes for heat when I make it for myself. Keep cooking, PBJ!
