Hey, PBJ’s… I’m back with another delicious and easy to make recipe. Today I’m going to share a “Quick 30 minute” recipe that I think yall will love. That’s right, a meal that’ll be done in the snap of a finger.

Why This Kielbasa Recipe is Perfect for Busy Days

Are you a busy single mother whose had a long stressful day at work… or a hardworking man whose been on ya feet all day and just want something easy to cook?

Well… this recipe is perfect for those “JUST AIN’T FEELING IT” occasions.  We’ve all had those type of days before – I know I have because I’m a very lazy person in general lol so everyday is a “JUST AINT FEELING IT” day for me! LMBO!

This recipe is perfect because not only does it take less than 30 minutes but it’s pretty tasty and different. I mean, it’s not something you see people making everyday. And guess what? You only need a handful of ingredients to cook this dish!

All you need is Polska Kielbasa, onions, peppers, and your favorite rice… I like to use ‘Success 10 minute boil-in-bag‘ white rice.

Childhood memories of Polska Kielbasa

Some of you maybe wondering what made me think of a recipe like this. I got it from my momma!!! Lol!I remember her making this dish for my sister and I back in the 90s. That was when I fell in love with Polska Kielbasa…and why I named this recipe after her.

I’m not quite sure what made my mom think of this dish but when I would walk into the kitchen and see she was making it for dinner, i’d always get excited – that’s how much I loved it! I guess when you’re a single mother on a fixed income, you find things to put together and make a good dish out of.

Everyone knows I love white rice… kielbasa has to be my second favorite sausage of all time, and sauteed onions n peppers are just good. So it’s no surprise that I would loved this dish!

I want yall to try this recipe and let me know how it is… You can put you own little spin on it of course. I did a YouTube video for this recipe years ago and remember my subscribers telling me how they replaced the peppers with hot peppers and some said they replaced the rice with potatoes.

So feel free to customize this recipe to your liking. It’s a very versatile dish but i’d like for yall to follow the recipe to a T first and then decide if you want to make changes to it afterward.

Description

Boiled white rice, topped with sauteed onions, peppers, and Polska kielbasa sausage.


Ingredients

  • 16oz Polska Kielbasa
  • 1 Qt Water
  • Success 10-Minute ‘Boil-in-Bag’ White Rice
  • 1/2 Cup Onions, chopped
  • 1/2 Cup Green Bell Peppers, chopped
  • 1/4 Cup Vegetable Oil
  • 1/2 Tsp Seasoning Salt
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • 1/4 Tsp Black Pepper

Instructions

  1.  Fill a small pot with cool water, then place it over high heat for 8 minutes.
  2.  While the water is preheating, chop the kielbasa into 1/8th inch circular-shaped pieces and coarsely chop the onions & peppers.
  3.  Once the water comes to a boil, add in the bag of rice, and let it boil for 10 minutes.
  4.  Place a skillet over medium-high heat, add in the oil, and preheat for 3-4 minutes. 
  5.  Add in the chopped kielbasa, onions, and peppers.
  6.  Sprinkle in the seasonings and toss well.
  7.  Cook the kielbasa for 7-8 minutes, and stir periodically.
  8. Serve the kielbasa, onions, and peppers over the rice.

Notes

  • You can season the rice with a little seasoning salt and pepper and add  in a little butter. There are different ways to touch it up if you don’t want it plain.

  1. I make a similar variation of this recipe but I use brown rice so the cook time is more like 45 minutes. I cook the rice in chicken broth and I also use 2 types of peppers..yellow and green for color, onions and chives with a bit of garlic. Mushrooms and zucchini are also sautéed with a bit of Worcester sauce, soy sauce and a splash of teriyaki for flavor 😋 👌

  2. This is the first recipe that I’ve made in a year that when it says 30 minutes MEANS 30 minutes (or less). I usually spend 3 hours in the kitchen. This was quick, super tasty, and easy cleanup. I will definitely be making this again.
