Hey guys, it’s Jay and I’m back with another soul food recipe. Today I’ll be showing you how I slow cook my turkey wings in a little ole crockpot. This dish is comfort food at its best.

And It’s the perfect dinner during cold winter months. If there was a picture next to the word “HEARTY”, there would be a plate of these savory bone-sucking turkey wings aside it!!!

Growing up on smothered turkey wings in the 90’s

Smothered turkey were a staple dish my parents often made for dinner, especially during the winter season. My mom made them a lot for Sunday dinner which was a tradition in my family.

What I loved about them most was the savory turkey gravy. My parents used water to make the gravy which is fine but I found that using turkey broth is better because it enhances the turkey flavor.

Now you’re going to need a wet cloth close by while eating these bad boys because ya hands will be a hot sticky mess from all the finger-licking action that’s gonna go down. The gravy gets all over your hands and makes them sticky! Lol!

Nana Alice & aunt Pam hate big ole Wings

One thing I vividly remember when I was young, is how much my Nana and aunt Pam hated big jumbo wings. They would call them “BABY ARM” wings. Lol!

So whenever we went shopping for chicken or turkey, I would always hear them asking the meat man for smaller size wings. They always told me large meat was unnatural and filled with steroids, which I later found out was PARTLY and at times can be true!!!!

So I love to get small to medium-sized turkey wings, yall make like them large but I definitely go for the smaller wings. The idea of huge turkey wings or drumsticks sort of freaks me out because I’ve been convinced that it isn’t natural but if you like them big, do you.

The benefit of slow-cooking smothered turkey wings

Cooking these in a slow cooker allows you to clean up around the house, take care of some parental duties, or chill to watch a game, show, or movie without having to check the food every 15-20 minutes. It’s not arduous either!

Once you get them in that crockpot, you just have to play the waiting game which is why it’s the perfect choice for dinner when you have a lot to do around the crib or just wanna have food done by the time you get off work.

Cookware & utensils you’ll need:

Ingredients you’ll need:

  • Turkey wings
  • Onions
  • Green Bell Peppers
  • Minced Garlic
  • Vegetable Oil
  • Butter
  • Salt
  • Garlic Powder
  • Onion Powder
  • Ground Sage
  • Dried Thyme
  • Dried Rosemary
  • Black Pepper

For the gravy

  • Turkey Broth
  • All-Purpose Flour
  • Campbell’s Cream of Chicken

About the turkey wings and alternatives

Turkey wings… the star on the stage! Yes they can be replaced for turkey legs or you can use a combination of both long as it equals up to 2 lbs – 3 lbs.

The amounts of ingredients use in this recipe can work for another pound of turkey because there’s always a lot of seasoned gravy left over from the 2 lbs I usually make.

About the seasonings & herbs

  • Salt: Salt is the best flavor enhancer. If you don’t have salt you can replace it with seasoning salt, Adobi, or another complete seasoning like Badia Sazon complete seasoning or you’re favorite complete seasoning.
  • Garlic & onion powder: Garlic and onion powder are big players in this dish. Garlic and onion powder are like a dynamic duo. We season so many things with both because of the flavor they add to a dish.

    You simply have to have garlic and onion to add depth of flavor. I use onions and minced garlic but the powder better seasons the meat while the onions and minced garlic help to season the gravy.
  • Black pepper: Black pepper just makes everything better. If for whatever reason you don’t have black pepper, you can definitely use white pepper.
  • Rosemary, Thyme, and Sage: Herbs add a great flavor and aroma to the dish! If you don’t have these ingredients use Italian seasoning or Poultry seasonings. 

    Italian seasonings depending on the brand typically have all these same ingredients/herbs in it and more same with poultry seasoning. 

About the gravy ingredients and alternatives

Turkey broth – I know turkey broth can be hard to find. Sometimes I don’t even see any in big supermarkets in Philly like Acme or Giants… I be like “What the heck”?! 

  • Chicken broth: Chicken broth is actually my #1 option if I need to substitute turkey broth and the best option. It won’t change the taste or alter the recipe in any way.

    The only thing you may notice is that the gravy doesn’t have the same rich turkey flavor it would if you use turkey broth. That’s the only small difference I noticed.
  • Chicken bouillon cubes or base and water: Now if you dont have chicken broth chicken base or bouillon cubes are another great substitution. All you have to do is combine either of the two with water. 

    Get 3 cups of water and stir in a couple of tablespoons of base or as much as needed until it tastes like chicken broth. I would say 2 tbs should do the job and if you go with bouillon cubes, 1 bouillon cube per cup of water should do the job….
  • Vegetable broth: Have vegetable broth? Cool throw that in there. I would just use less of this because vegetable broth is high in sodium so mix it with water. Use maybe 1-1/2 cups vegetable broth and 1-1/2 cups water.

All-purpose flour – Flour is what thickens the broth turning it into a gravy. Flour or cornstarch mixed with a liquid like water or broth is called a slurry. I combine, the flour, broth, and cream of chicken to make what turns into a delicious gravy.

  • Cornstarch: If you don’t have any flour you can use cornstarch. It will give the gravy a glossy look vs flour which gives the gravy a more dull look. But both will help achieve the same goal and that’s a nice gravy.

    However, flour can stand the test of time, unlike cornstarch which thins the longer it cooks. So scoop out a little of the juice in the crockpot into a bowl and stir in the cornstarch. Then add it to the crockpot during the last hour of cooking. 

Cream of chicken – The cream of chicken, by Campbell’s soup, adds an amazing flavor to the turkey wings, and it adds thickness and richness to the gravy as well.

  • Cream of celery – I love to make turkey wings with onions and peppers, but who doesn’t? Most folks like to add celery as well but I decided to add cream of celery one time because I didn’t have any cream of chicken.

    I thought it would be the best alternative and let me tell you, it tasted great. So if you don’t have any cream of chicken you can use cream of celery. Both taste really great with turkey wings.
  • Cream of mushroom – Like mushrooms? Then use a can of cream of mushroom if you like. My mom loves mushrooms and told me to use it next time. I’ll give it a shot, I’m sure it’s good and cant hurt, especially for mushroom lovers like her. 

Other gravy methods such as a Roux

So some people like to make a roux and the benefit to making a roux is you get to decide the color of the gravy by the length of time you cook your fat and flour which browns the longer you stir it in the skillet over the heat.

I do that at times but I find it far easier to just combine the broth, cream, and flour, which as I mentioned earlier is called SLURRY, for those who are new to cooking. You get pretty much the same result while saving a little time.

Why sear the turkey wings?

  • Crisps the skin:  One thing me and my family always loved about turkey wings and what we probably loved the most was the skin. Nothing better than crispy turkey wing skin.

    Turkey wings simmering in a crockpot for 4 to 8 hours will leave the skin soggy as wet tissue and completely falling off the bone and you dont want that I’m sure.

    So searing them so that when they’re done the skin is not completely soft is one of the reasons to sear them before adding them to the crockpot.
  • Adds Flavor: When you sear meat like chicken or turkey, you extract the fat which is filled with flavor. So deglazing all those juices and remnants at the bottom of the skillet and adding it to the crockpot helps add flavor to the dish.

How to prepare and clean turkey wings

Ok so people have so many different views on cleaning meat. Some people think cleaning meat causes the spreading of germs and believe you don’t need to clean it because the heat will kill any bacteria that may still be on it.

Others say cleaning your meat is necessary because they don’t believe meat is completely cleaned by manufacturers before packaging and just like to make sure it’s clean by cleaning the meat themselves. 

I grew up in a black family and we always believed in cleaning our meat so yea, I’m on the side of team #cleanyourmeat! And by the way, when I say clean I don’t mean removing fat, excess skin, membrane, and hairs you may find on certain chicken parts.

I think both parties agree that those things should be removed. I’m talking about soaking these boyz in a cleaning agent for a few minutes and giving them a nice scrub. Now when it comes to cleaning meat, the products I like to use are 

  • Salt: Salt and water is probably the most common way people clean their meats – cant go wrong with salt. Just make sure you dont have them sitting in the salt water too long and brine them accidentally! Lol!
  • Vinegar: Vinegar is a great cleaning agent people love to use to clean food. Vinegar water works well and it’s what I typically use myself to clean my meats.
  • Lemon juice: Now while some people like to use lemon juice, I personally only use it as an alternative if I don’t have any vinegar or salt on hand which is rare. It’s all based on preference though.

    One thing I’ll say about lemon… it’s a good lightener, so if you have some old wrinkled gray turkey wings that’s been sitting in the freezer for 2 years, lemon juice and water might definitely be what you need to lighten them up!! LMBO!

You can use any of these products with water to clean meat. After I remove the membrane, fat, excess skin, and hair if there is any, I soak my meats in vinegar water.

Sometimes I decide to be extra and use both salt and vinegar, don’t ask me why.  Anyway, after I soak the turkey wings in the salt water, I scrub them with my hands and then give them a nice rinse. Make sure to pat them dry afterward so the seasoning sticks well.

Now before we move on, I just want to share this quick story with yall because yall know I always got a story for yall. And since we’re on the topic of cleaning meat and this story is pertaining to cleaning meat, I want to share it with yall.

This story not only funny but it’s when I learned the power or lemon juice. So, I use to rent out a room in Southwest Philly back in 2009 at the age of 22 where I had 3 other roommates. This was actually my first time on my own. 

And back then yall, I didn’t even store my meats in nice clear Ziploc bags, I would wrap them in aluminum foil and have the meat sitting in the freezer forever. Looking back now, aluminum foil made the inside of my freezer look so ugly.

Btw, aluminum foil doesn’t protect and preserve meat the way Ziploc bags do, because meat turns gray and frost bit in aluminum foil much quicker than it does in Ziploc bags.

Anyway, I’ll never forget it was a bright Saturday morning, and I decided to clean the kitchen. I emptied out the freezer and threw all this old meat I had sitting in the aluminum foil for months in a big trash bag.

Ms. Odessa, my roommate from upstairs, happen to walk in the kitchen and saw me throwing out the meat, and looked at me like I was crazy. She said enthusiastically, “BOY WHAT ARE YOU DOING”?

I said throwing this meat away because it’s old and gray looking. She said, “WHAT BOY CLEAN THAT MEAT”!! She snatched the bag from me and began pulling the frozen meat out.

She put all that gray ugly meat in a huge bowl she had, submerged it in vinegar salt water, sat it in the frig for 3 hours, and when I say the meat looked so fresh and pink afterward, it look like I just bought it from the store.

We seasoned that meat to perfection, grilled it, and ate on it all week. Ms. Odessa, who was an older handicapped woman in her early 60s, was on a fixed income and got food stamps… she didn’t play about wasting food.

I remember her saying, “The meat isn’t bad it’s just that color because you didn’t fully wrap it and it’s been exposed to cold air for so long. Use Ziploc bags in the future. It will keep ya meat fresh longer, it looks neater, plus you’ll be able to see what’s what”.

I’ve been storing my meats in Ziploc bags every since. As a matter of fact, soon as I get back from the grocery store, I unload all my meat, clean it, and place it in Ziploc bags, it makes a world of difference. Thank you, Ms. Odessa! I pray you’re well. 

How to make smothered turkey wings in a slow cooker

  1. Clean the turkey wings: Let them soak in water and a cleaning agent. Scrub them really well with your hands, afterwards, rinse, and then pat dry before seasoning.

  2. Preheat the crockpot: Preheat the crockpot because you want it to be hot by the time you add the turkey wings. However, what you turn it on depends on how long you plan on cooking them.
    You can cook them sort of quick on high for 3-1/2 hours or if you’re away from the crib at work for several hours, cook them on low for double the time, 7 hours. So preheat on low or high, depending on how long you’re gonna let them cook.
  3. Make the slurry for the gravy: Ok so while the turkey wings are soaking, prepare the gravy by making a slurry. Add the broth, cream, and flour to a nice big bowl, and whisk until smooth. Then add the gravy to the crockpot along with the rosemary and thyme.

  4. Season the turkey wings: The next step is to season the turkey wings but season them with everything except for the Rosemary and Thyme leaves because we’ve already added those two to the crockpot with the slurry.
    The reason I don’t add the Rosemary and Thyme leaves is because I don’t want them to burn while the turkey wings are frying. So yea add them to the crockpot after adding in the slurry.

  5. Sear the turkey wings: Place the turkey wings in a skillet of oil over high heat for 4 minutes per side to brown them and give the turkey wings a crispy skin, then add them to the crockpot of slurry.

  6. Side note: Just to make sure no seasoning is wasted. To make sure the turkey wings are seasoned as well as possible, I add some of the broth to the bowl I seasoned the turkey wings in, and shake it a bit to get all the leftover seasonings out and add it to the crockpot.
    I hate wasting seasoning and sometimes, I like to get left behind in whatever you season the turkey wings in. My grandma always made sure to clean out the mixing bowls she used to seasoned her meats with broth or water.
    You’ll find chefs doing this with the burned bits and remnants left in a pan after frying meat, they call it deglazing. So if you find that you have a lot of seasoning left in a dish you seasoned your turkey wings in, make sure to rinse it with some broth.

  7. Saute the onions, peppers, and garlic: After you remove the turkey wings from the skillet, drain any leftover oil because we don’t want the dish to be too greasy. Place the skillet over medium-high heat this time, and add the butter.
    Once the butter melts, add in the onions and peppers and sauté until caramelized. Add the minced garlic during the last minute right before you take them out or you can just add the minced garlic to the crockpot.
    I like to sauté them a bit to enhance the flavor so I always just add it last right before I take the onions and peppers out. Once they’re nice and caramelized, add them to the crockpot.

  8. Cover with a lid and simmer until done:  But that’s it yall….cover them with the lid and let them simmer until they’re nice and tender. I also give the gravy a nice stir at least once so it thickens evenly and to prevent the wings from sticking.

What to serve smothered turkey wings with

So some of you may be trying to think of something to make that taste great with turkey wings. Here are some sides I would recommend you make with your turkey wings. 

  • White rice: I think white rice is probably the side dish people make the most to go with their turkey wings, especially smothered turkey wings because nothing goes better with gravy than rice.

    Rice and gravy go together like eggs and cheese, ya feel me? Rice is my favorite side to make whenever I’m cooking meat with gravy for dinner so white rice would be my first recommendation. 
  • Egg noodles: Egg noodles, OMG… they TASTE SO GOOD with turkey wings and smothered with that savory turkey gravy? 2nd to none! One of my favorite things to eat with turkey wings and gravy.
  • Mashed potatoes: Come on… yall know mashed potatoes had to make the list. Whenever you’re talking gravy mashed potatoes gonna be a part of the conversation.

    Mashed potatoes are the first thing people think of when you mention gravy. The only reason it’s not first on this list is because I think rice and egg noodles go better with turkey wings.

    Mashed potatoes obviously taste best with steak. But mashed potatoes would make a good side too… notice all these sides taste great with gravy. 
  • Green beans:  Green beans are that vegetable that goes great with anything so you can’t go wrong here. They’re the best vegetable to eat with turkey wings in my opinion. I just love how the two flavors taste together.
  • Sweet corn: These savory turkey wings will go great with some sweet buttery corn, OMG! That sweet savory effect… corn is probably my 2nd favorite veggie to eat with turkey wings.

Frequently asked questions

Can you use other turkey parts, like turkey legs?

Of course, you can use any turkey part you want, like the drumsticks, aka legs, a portion of the wings, or the wings like I’m using here. Just stick with the same measurements, that’s all. 

Do I have to use cream of chicken?

NO!!! Sometimes when I bake my wings I don’t use cream of chicken. I typically only use it when making them in the crockpot because the pressure produces a lot of liquid.

I try to combat that by adding the cream of chicken for additional thickness for the gravy. Making turkey wings without the cream I found allows you to taste more of the turkey wing’s “turkey” flavor.

How to store smothered turkey wings?

Tightly sealed in a Tupperware dish in the refrigerator in the coldest area or in the freezer if you plan on storing it to eat at a much later time.

How to make the gravy smooth when reheating?

Simply place a skillet over low heat, add in the gravy and a little broth or water, and stir until smooth and warm. Add as much broth or water as needed.

How long do smothered turkey wings last?

4-5 days in a refrigerator, and much longer if stored in a freezer. Make sure they’re tightly sealed in a tupperware bowl or ziploc bag if you store them in the freezer.

Anyway, these turkey wings are super delicious, savory, and flavorful yall. You won’t find too many slow cooker turkey wings recipes better than this.

Description

Ingredients

  • 2 Lbs Turkey Wings
  • 1 Cup Onions, coarsely chopped
  • 1/2 Cup Green Peppers, coarsely chopped
  • 1/4 Cup Vegetable Oil
  • 1 Tbs Butter
  • 1/4 Cup All-Purpose Flour
  • 10 oz Campbell’s Cream of Chicken
  • 3 Cups Turkey Broth
  • 1 Tbs Minced Garlic
  • 1 Tbs Salt
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1/2 Tsp Ground Sage
  • 1/2 Tsp Dried Thyme
  • 1/2 Tsp Dried Rosemary
  • 1/2 Tsp Black Pepper

Instructions

  1.  Preheat the crockpot: Turn the crockpot to high heat and close the lid.
  2.  Slurry for gravy: In a big bowl, combine the turkey broth, cream of chicken, and flour, then stir well.
  3.  Add the slurry to the crockpot then sprinkle in the Rosemary and Thyme leaves.
  4.  Preparing the Turkey wings: Place the turkey wings in a big bowl or dish and season both sides.
  5.  Place a skillet over high heat and add in the oil.
  6.  After 2 minutes, add in the turkey wings and sear on each side for 3-4 minutes, then remove and add them to the crockpot.
  7.  Remove the oil from the skillet, place it over medium-high heat, then add the butter.
  8.  Once the butter melts, add in the onions and peppers and saute for 4 minutes, add the minced garlic during the last minute so it doesn’t burn.
  9.  Crockpot instructions: Once done, add to the crockpot, cover with a lid, and simmer until done, about 3-1/2 hours.

Notes

If you want your wings falling off the bones, cook them for 4 hours.

  8. I cooked this on slow cook in my cast iron Dutch pot in my Emeril Lagasse on medium low (325 degrees) for 3:30 hours and it came out delicious. A little broth added to the mixture cuts down on the extreme stickiness.
    Next day for breakfast- a wing and some grits. Oh, my goodness!!






  9. Well unfortunately the turkey itself disappointed. The sauce and the method and everything was delicious but the turkey even though it was advertised as wings I suspect was actually drumsticks because they were huge. DH doesn’t care especially for turkey parts which I had no knowledge of. He only likes turkey breast meat which I didn’t know. He really liked the sauce and wondered if it might be good possibly with chicken which I think it would. I love turkey wings so I guess I’m going to have to sometime make it for myself when I can actually find the right turkey wings these were very strange

  11. If I wanted to put them in the oven would I cooked them the same exact way, if not what modifications do I need to make

  12. Used your recipe to fix 1 wing, 1 thigh and 2 legs. After reading remarks I added 2/3 cup of Wild Rice Mix and just put everything in my 6 quart crockpot to cook. It took 6 hours on high for the legs to get to fall off the bone done. It was so good!

    Jay I have a question. On your recipes where it says 1x 2x 3x only the meat portion amount changes.

    For a 2x serving do I change all measurements by two? Example if a 1x measurement calls for 1/2 tablespoon of pepper is the 2x measurement 1 whole tablespoon of pepper?

    Also I’m making your recipe for turkey wings I plan on using the 2x recipe instead of 10oz of cream of chicken am I using 20oz. Thank you much sir!

    Now you know better posting this Recipe!!! I made this on Saturday, but with turkey drumsticks instead of wings. Oh me oh my it was delicious!!! The gravy was delightful and it was my first time making gravy too! I put the everything in my ninja crockpot on low for four hours and then I cracked up high for the next four hours, but I didn’t mind because I had plans the following day. This recipe is definitely for the books. I’m going to pretend it’s my family recipe shhhh don’t tell anyone.

      The recipe turned out perfectly, I did wisk the cream of chicken, broth and flour. But I added some personal touches, redpeper and hot spices for a little heat as I carmelized the peppers and onions.

    1. No, it takes 4 hrs. You may have done something wrong but it doesn’t take more than 4 hrs to complete this recipe. Look through the instructions and figure out what you may have done wrong.

    1. This recipe was AWESOME!! My wife who loves her turkey wings did not say one word at the dinner table. I added (2) turkey legs to this recipe for my son. I have a 8 quart crock pot and everything fit with room to spare. I also added poultry seasoning to this recipe.

    1. I used water instead of turkey broth. I made this putting approx 2/3 cup brown rice (uncooked) into bottom of crock pot also. Very tasty. Now I just put pork roast into crock pot w/rice. Look forward to eating it!! I put all spices w/about 2-3 tsp canola oil (instead of butter) along with roast, into plastic bag & shake to evenly coat & put in crock pot.
